Three Bean Chili

Ingredients

Quantity Ingredients
1-1/2 cups chopped onion
2 tsp soybean or vegetable oil
1 (15 oz.) can white soybeans
1 (15 oz.) can black soybeans
1 (15 oz.) can kidney beans
2 (14.5 oz.) cans diced tomatoes
1 (15 oz.) can tomato sauce
1/2 cup brown sugar
1/2 tsp salt
1 tsp black pepper
2 tsp ground cumin
2 tbsp minced garlic
1 tbsp chili powder

Directions

1. In a large pot, heat oil over medium-high heat. Cook onions until soft. Drain and rinse three beans and add to onions. Stir in all remaining ingredients. Bring to a boil and reduce heat to low. 2. Simmer for 30 to 45 minutes, stirring occasionally. Nutrition Information per serving: 360 calories, 7g total fat, 1g saturated fat, 20g protein, 0mg cholesterol, 12g fiber.
