Wasabi-Basil Dressing

Green wasabi paste is made from powdered Japanese horseradish and is the sinus-clearing condiment typically served alongside sushi or sashimi in Japanese restaurants. It contributes a wonderful hotness and elusive flavor to this vinaigrette. This amount of dressing will dress about 12 cups of salad greens (enough for 6 side salads). The dressing was created for middle-of-the-road spice palates, so if you like things really spicy, add more wasabi to taste.

Wasabi-Basil Dressing

Ingredients

1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup finely chopped fresh basil leaves
1 clove garlic, smashed and peeled
1 tbsp prepared wasabi paste
2 tsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper
Dress with: chopped fresh parsley

Directions

1. In large bowl, whisk together olive oil, vinegar, basil, garlic, wasabi, mustard, salt and pepper. If dressing does not get used right away, do not leave garlic in dressing unless you really like pungent garlic flavor; it will get stronger as it sits. Makes 1 cup.
