Watercress Soup


Quantity Ingredients
1/4 lb. chourico (or other heavily seasoned pork sausage (eg. pepperoni)
1/2 cup split peas
1 shank bone
1 pork bone
1 carrot, diced
1 stalk celery, diced
1-1/2 tbsp. salt
1-1/2 cup chopped watercress
1 large potato, diced or 1/4 small macaroni
3-1/2 qts. water


1. Combine all ingredients except watercress and potato or macaroni in a large stew pot. Bring to a boil then simmer, covered, until peas are soft. 2. Add watercress, and cook for 10 minutes. Add diced potato or small macaroni; cook till soft.
