Whole Wheat Kasha Burgers with Mushroom Sauce

Ingredients

1 cup kasha groats
1/4 cup scallions, sliced
4 cups water
1/4 tsp. salt
1 cup whole wheat flour
2 tbsp. oil
soy sauce
sliced cheese, optional
Kasha Sauce
6 scallions, sliced
4 tsp oil
1/2 tsp salt
1 cup mushrooms, chopped
4 tsp tamari (soy sauce)
4 tsp whole wheat flour
1 cup cold water

Directions

In saucepan boil water, add groats and salt and simmer 15 minutes; cool and set aside.

In small fry pan heat oil and sautee scallions until soft. Remove and cool.

Preheat oven to 300F. Season kasha with soy sauce to taste. Add flour and mix well. Add scallions and mix. When firm, make patties and bake on oiled cookie sheet. The last 5 minutes put cheese on burgers to melt. Makes 6-8 burgers.

For the sauce, heat oil and sautee scallions until soft with mushrooms. Remove and cool. Add flour and water, stirring constantly. Heat to boiling, lower and simmer 10-20 minutes, add water if needed. Add salt and serve with the burgers.
