Maple Glazed Pork with Barlett Pears

Ingredients

Quantity Ingredients
3 fresh Barlett pears
3/4 cup maple syrup
1/2 cup brown sugar
2 tbsp prepared mustard
2 tbsp butter
1 tbsp whole cloves
2-1/2 to 3 lbs. rolled trimmed pork loin roast
salt and pepper

Directions

1. Place pork on rack in shallow roasting pan. Season with salt and pepper. Insert meat thermometer. Roast at 325 degrees F until thermometer registers 170 degrees F, or about 35 to 40 minutes per pound. 2. Meanwhile, halve and core pears, leaving skins on. 3. Combine maple syrup, brown sugar, mustard, butter and cloves. Stir over low heat until the sugar has dissolved. During the last 30 minutes of pork roasting time, place pears, cut side up, in roasting pan with pork. Baste pears and pork frequently with maple glaze. 4. Serve glazed pear halves as an accompaniment to the pork roast. Brown rice or risotto also goes well with this meal.
