| 1-1/3 cups | skim milk |
| 1 tsp | vanilla extract |
| Low-calorie sugar substitute to equal 2 tablespoons sugar | |
| 1 | ripe banana |
| 1/4 cup | whipping cream, whipped |
| 2 | kiwi fruit, sliced, for garnish |
Directions
1. Cook rice and milk in 2-quart (8 cup) saucepan over medium heat until thick and creamy, 5 to 8 minutes, stirring frequently. Remove from heat; cool. 2. Stir in vanilla and sugar substitute. Just before serving, mash bananas; fold banana and whipped cream into pudding. Garnish with kiwi fruit slices.
