|2 large||tomatoes, peeled, seeded and diced|
|1/2 cup||fresh basil leaves, chopped|
|1/4 cup||red wine vinegar|
|1/2 cup||olive oil|
|2 tbsp||Dijon mustard|
1. In a medium size saucepan, combine all of the ingredients. 2. Bring to a simmer over medium-high heat, stirring frequently. Cook for 2-3 minutes or until the tomatoes soften slightly. 3. Serve immediately.
