| 2 large | tomatoes, peeled, seeded and diced |
| 1/2 cup | fresh basil leaves, chopped |
| 1/4 cup | red wine vinegar |
| 1/2 cup | olive oil |
| 2 tbsp | Dijon mustard |
Directions
1. In a medium size saucepan, combine all of the ingredients. 2. Bring to a simmer over medium-high heat, stirring frequently. Cook for 2-3 minutes or until the tomatoes soften slightly. 3. Serve immediately.
