Corn on the cob without butter or salt? Absolutely! Fresh lime juice and a spicy Cajun rub turn corn on the cob into a healthy side dish you’ll want to make again and again.

Grilled Corn on the Cob with Cajun and Lime Rub

Ingredients

Quantity Ingredients
1 tbsp (15 ml) paprika
1/2 tbsp (7 ml) garlic powder
1 tsp (5 ml) freshly ground black pepper
1/8 tsp (0.5 ml) cayenne pepper
1 lime, cut into quarters
4 corn on the cob, husked

Directions

In a small bowl, combine paprika, garlic powder, and peppers.

Bring a pot of water to a boil. Add corn; boil for 3 to 4 minutes. Remove from heat.

Rub each cob with a slice of lime and sprinkle with Cajun seasoning.
