Sautéed Spinach with Lemon

This dish is an easy and tasty way to up your intake of leafy greens. It's loaded with bone-building vitamin K, folate, magnesium, potassium and lutein, an antioxidant that helps preserve vision as you age.

Sautéed Spinach with Lemon

Ingredients

Quantity Ingredients
1 tbsp / 15 ml olive oil
2 cloves garlic, crushed
8 cups / 2 L spinach
2 tbsp / 25 ml freshly squeezed lemon juice
1/4 tsp / 1 ml coarse sea salt, or to taste
freshly ground pepper, to taste
Pinch red chili pepper flakes, or to taste

Directions

Heat oil in a large skillet over medium heat. Add garlic; sauté for 1 minute.

Add spinach, lemon juice, salt, pepper and red chili flakes to skillet; cover and steam for 3 to 4 minutes, or until spinach is wilted. Remove from heat and serve immediately.
