Simple Sautéed Spinach with Lemon

This tasty side dish delivers vitamins C and K, folate, iron, magnesium and potassium and plenty of lutein, an antioxidant that helps keeps your eyes healthy as you age.

Simple Sautéed Spinach with Lemon

Ingredients

Quantity Ingredients
1 tbsp / 15 ml olive oil
2 cloves garlic, crushed
8 cups / 2 L spinach
2 tbsp / 25 ml freshly squeezed lemon juice
1/4 tsp / 1 ml coarse sea salt, or to taste
freshly ground black pepper, to taste
pinch red pepper flakes, or ot taste

Directions

Heat oil in a large skillet over medium heat. Add garlic; sauté for 1 minute.

Add spinach, lemon juice, salt, pepper and red pepper flakes to skillet; cover and steam for 3 to 4 minutes, or until spinach is wilted. Remove from heat and serve immediately.

Serves 4.
