Bosc Pear Bread and Maple Walnut Butter

Breakfast, Desserts, Snacks.
A moist, dense tea bread, filled with nuggets of ripe Bosc pears (Anjous can be substituted) and topped with pears and honey glaze. Offer Maple Walnut butter to top slices. 

Bosc Pear Bread and Maple Walnut Butter

Ingredients

Quantity Ingredients
2 eggs
3/4 cup canola oil
1 cup granulated sugar
1 tsp vanilla extract
1 Bosc pear, cored and grated
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 cup walnuts, chopped plus 1/2 cup chopped walnuts for garnish
1 Bosc pear, cored and sliced for top garnish
1/4 cup honey for glaze, if desired

Directions

1. Preheat oven to 350 degrees F. Grease 4-1/2" x 8-1/2" metal loaf pan. 2. Beat eggs, oil and sugar together until light and fluffy. Add vanilla and grated pear. 3. In a second bowl, blend flour, baking soda, baking powder, salt, cinnamon and walnuts. Add the flour mixture to the wet ingredients, stirring just to moisten. 4. Spoon into prepared pan. Arrange pear slices on top and sprinkle with 1/4 cup walnuts. 5. Bake 50-60 minutes or until a cake tester comes out clean. Cool 15 minutes before removing from pan. 6. Brush with honey, if desired. Serve with Maple Walnut Butter (recipe below) Maple Walnut Butter 1 cup maple syrup 1 cinnamon stick 1/2 cup butter, melted 1/2 cup walnuts, chopped 1. In a small saucepan boil maple syrup with whole cinnamon stick for 8-10 minutes until the syryp has thickened. Remove from heat and remove the cinnamon stick. 2. Whisk in butter until opaque and thickened. Stir in walnuts. Chill to firm. Makes approximately 1-1/2 cups.
