2 cups | all-purpose flour |
1/2 cup | granulated sugar |
1 tbsp | baking powder |
1 tsp | salt, if desired |
2 tbsp | grated orange zest |
1/2 cup | walnut butter spread |
1/2 cup | fat-free milk |
1/4 cup | egg substitute (such as egg beaters) |
1 tsp | cinnamon |
Directions
1. Preheat the oven to 450F. Cover a baking sheet with foil. 2. In a medium bowl, sift together the flour, 1/3 cup of the sugar, the baking powder and salt, if desired. 3. Add the orange zest and walnut spread. Blend into dry ingredients with your fingertips or a pastry blender until the mixture is crumbly. 4. Add the milk and egg substitute. Stir until moistened and the dough sticks together. 5. Turn onto a lightly floured work surface and knead gently about 8 times. Pat the dough into a circle about 1/2 inch thick and 8 inches across. 6. Stir together cinnamon and the remaining sugar. Brush the dough lightly with water and sprinkle with the cinnamon sugar. 7. Cut the round into 8 pie-shaped wedges. Place the scones, barely touching, on the foil-covered baking sheet. Bake for 10-12 minutes, until golden. 8. Serve warm.
