Grilled Fruit Kabobs

This is a refreshing dessert to cap off a summer barbecue.  The fruit needs only to be heated, so cooking time is short.  For a variation on this recipe, soak the fruit in orange juice or brush with rum before grilling.  Be sure the grill is cleaned well before barbecuing. I suggest serving these kabobs with a yogurt dip.

Grilled Fruit Kabobs

Ingredients

Quantity Ingredients
12 bamboo skewers
2 apples, peeled, cored and cut into 1 inch (2.5 cm) chunks
2 pears, peeled and cored and cut into 1 inch (2.5 cm) chunks
2 cups / 500 ml strawberries
1 large orange, peeled and sectioned

Directions

Fill a shallow dish with water; soak skewers for 30 minutes.

Preheat clean grill to medium-low.

Thread 5 to 6 pieces onto each skewer, alternating types of fruit.

Lightly coat the grill with cooking spray.

Grill kabobs, rotating every few minutes to prevent sticking, until lightly brown.  Allow to cool before serving.

Serves 6. 

Per serving (2 kabobs): 87 cal, 1 g pro, 1 g total fat (0 g sat. fat), 22 g carb, 4 g fibre, 0 mg chol, 1 mg sodium
