Self-Saucing Peach Pudding

Desserts.
Peaches, plums or nectarines work well in this old-fashioned, easy dessert. Serve with a spoonful of ice cream or sweetened yogurt.

Self-Saucing Peach Pudding

Ingredients

Quantity Ingredients
1/3 cup butter
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1 tsp ground cinnamon
1/4 cup milk
Sauce:
4 cups sliced peaches or nectarines (about 6)
1/4 cup packed brown sugar
1/2 tsp cinnamon

Directions

1. In 8-cup (2L) baking dish, melt butter in 350 degree F oven. In bowl, whisk together flour, sugar, baking powder and cinnamon until blended; whisk in milk until smooth. Pour over melted butter and whisk until blended. 2. Sauce: In saucepan over medium-high heat, bring peaches, brown sugar and cinnamon to boil; simmer for 2 to 3 minutes. Pour over batter. Bake for 30 to 35 minutes or until cake has risen to top and is puffed and golden. 3. Serve hot. Nutrition Information per serving: 423 calories, 11 g total fat.
