Dandelion Cheese Squares


Quantity Ingredients
2 large eggs
6 tbsp whole wheat flour
1 lb. dandelions, parboiled, chopped and drained well
(squeeze out extra liquid)
2 cups low-fat cottage cheese
6 ounces cheddar cheese, grated (2 cups)
1/4 tsp nutmeg
4 tbsp wheat germ


1. Preheat oven to 350F. In a large bowl, beat eggs and flour until mixture is smooth. Add dandelions, cheeses, pepper and nutmeg. Mix well. 2. Pour into a well-greased, 13- x 9- x 2-inch baking pan. Sprinkle with wheat germ and bake in preheated oven for about 45 minutes. 3. Let stand for about 10 minutes, and then cut into 1-1/2-inch squares. Makes 54 squares.
