Pomegranate and Blueberry Fruit Salad with Fresh Ginger

This simple but colourful salad combines some of my favourite fruits - fresh blueberries and mangoes - with shiny pomegranate seeds.

Pomegranate and Blueberry Fruit Salad with Fresh Ginger

Ingredients

Quantity Ingredients
1.5 cups / 375 ml pomegranate seeds (about 2 pomegranates)
1 cup / 250 ml fresh blueberries, washed and trimmed
1 mango, peeled and diced
2 tbsp / 25 ml pure pomegranate juice
1 tbsp / 15 ml minced fresh gingerroot

Directions

In a large bowl combine pomegranate seeds with blueberries and mango.

In a small bowl, whisk together pomegranate juice and gingerroot.  Drizzle over the fruit before serving.

Serves 4.
