Mexican Black Bean & Corn Salad

Ingredients

Quantity Ingredients
2 cans (15 oz.) black soybeans, drained and rinsed
2 cups frozen corn kernels, thawed
1 large red pepper, chopped
1/2 cup chopped red onion
1 cup chopped green onions
1 jalapeno pepper, minced
2 tomatoes, chopped
2/3 cup chopped cilantro
juice from two limes (about 1/4 cup)
1 1/2 tsp minced garlic
1 1/2 tsp cumin
1 tsp salt
1 tbsp olive oil

Directions

1. In a large bowl, combine soybeans, corn, pepper, onions, jalapeno, tomatoes and cilantro. 2. In a small bowl, combine lime juice, garlic, cumin, salt and olive oil; mix well. Pour over salad ingredients and toss lightly to coat. Chill several hours before serving.
